I did a takeover on the Whole30 Recipes Instagram feed in December, 2019, and this recipe received so much love! It’s a little more involved than my usual recipes (mainly because it uses a few more dishes and takes over an hour to cook), BUT I promise you it is worth it! If you’re looking for a grab-and-go breakfast option, or really want to impress your mother-in-law at your next family brunch, this recipe is for you! I wrote it to be made in 2, 6-count muffin tins, but you can easily make it in a 12 inch cast iron skillet by adjusting the cook time.

Sweet Potato Quiche With Sausage and Spinach:

Ingredients:

  • 1.5 pounds sweet potatoes

  • 1 pound #whole30 compatible breakfast sausage

  • 12 eggs

  • 1/2 cup bone broth

  • 2 large handfuls of spinach

  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375F and grease two, 6-count muffin tins with coconut oil.

  2. Peel and coarsely chop the sweet potatoes, then place in a food processor and pulse until finely diced.

  3. Transfer the sweet potatoes to a large bowl, add TWO eggs, and stir until well combined.

  4. Spoon the sweet potatoes into the muffin tins and press them to make a “crust” on the bottom and up the sides of each well.

  5. Bake the crust for 15 minutes.

  6. Meanwhile, brown the breakfast sausage in a skillet, and set aside.

  7. Whisk the ten remaining eggs in a large bowl, add bone broth, and season with salt and pepper to taste.

  8. When the crust is done, remove from the oven and drop the temperature down to 350F.

  9. Place the spinach on top of the crusts, then spoon the sausage on top of the spinach.

  10. Add the whisked eggs, and bake the quiches at 350F for 18-20 minutes, or until the eggs are set.

NOTES:

  • To make one big quiche in a cast iron skillet, cook the crust for 35 minutes at 375F and the quiche for 30 minutes at 350F.

  • Don’t have or cant eat sweet potatoes? substitute red or gold potatoes for the crust.

Hello! Do you cook the crust for 35 minutes and THEN add the eggs for 30 more? Or cook crust 5 minutes, then add eggs for 30 more?

Hi, Susan. If you’re making the quiche in one big cast iron skillet, you will want to cook the crust for 35 minutes, drop the oven temperature down, add all the fillings, and then cook the quiche for an additional 30 minutes. So, after it’s all said and done, it will take 65 minutes to fully cook (but I assure you it’s worth it!!!),

    How many does this make?

    1. Kelly @ Show Me Whole Living Avatar

Hi, Corinne. This recipe as written makes 12 muffins, using two, 6-count tins. You could use a 12 count tin, but you’ll likely have some ingredients leftover, since 6-count time are larger than standard 12 count ones.

Do you pre-cook or soften the sweet potatoes prior to dicing?

    Like

Nope! Simply peel them and dice them in a food processor. They’ll partially cook when you bake just the crust, and then they’ll finish cooking when you add the filling.

Planning on making these tomorrow! Any tips for freezing/defrosting?

I made a batch while I was super pregnant and then froze them to have on hand when baby arrived. I just put them in a freezer storage bag once they were completely cool, tried to squeeze out any air, and then stored them in the freezer. Then I brought the whole bag to the fridge to thaw and reheated then in the microwave. I’m sure you could just take out one at a time if you didn’t want to thaw the whole bag.

Is there something else I can use if I want to make one big batch but don’t have a cast iron skillet?

You could use a large baking dish!

I’ve made this a few times now and somehow keep forgetting to bake the crust alone first. I just did it again today 🤣. Anyway, do you have any tips for adjusting cook time when this happens? Because let’s be honest, I will probably forget again….

Oh no! I love your perseverance 😉. Honestly, you’ll need to cook the crust first before adding the egg mixture. Otherwise, by adding more time to cook the potatoes after the fact, your eggs are going to get over cooked and rubbery.

These look amazing!! I have all of the ingredients on hand right now but I am afraid that pulsing raw sweet potatoes in my little NutriBullet will destroy it!!! They are just so hard to even peel!!!

You may have to pulse them in batches, and not have too many in there at one time. OR, you can skip the food processor, and grate or finely dice them. Good luck!

Hi! You could try it with ground turkey or chicken (and making your own "breakfast sausage" seasoning), or omit the eggs altogether. Let us know what you try!

Any chance this can be done without a food processor? I don’t own one.

I’ve grated them before with my cheese grater. More labor intensive, but they cook quickly, so keep an eye on them!

Heather’s right! If you don’t own a food processor, you can grate them, OR finely dice them. The food processor cuts your prep time down (although it makes more dishes, LOL). Hope you loved them!

Not sure where I went wrong. I had way too much sweet potatoes. I ended up using 3 6 count muffin tins snd still had leftovers. Was I supposed to use extra large muffin tins instead of standard size. ? They are baking now so I’ll see how they taste when done. They still look yummy.

I hope they turned out great! It’s possible to have more sweet potatoes than needed, since the 1.5 pounds needed is an estimate. I know muffin tins come in all kinds of sizes, so mine could be bigger than yours. If you have extra sweet potatoes next time, I’d either fill up more tins or press them into a small cast iron skillet for a mini quiche, ~ Kelly

I love this recipe so much!! I’ve made in a 9” pie plate, regular cupcake tin, Pampered Chef stoneware mini loaf pan, and finally invested in some silicone muffin forms. All turn out great but the silicone really makes these slip out easily and not as fall-aparty as the other options (I just can’t figure out how to grease them well, I guess). My hubby cannot get enough of these – the flavor and protein really start his day off on the right foot, which is imperative for an ER nurse!!

Hopefully Missy will chime in. . . But I can say I’ve made this in a 12 inch cast iron skillet and kept the temperatures the same, but increased the cook time (30 minutes for crust, 30 minutes for eggs).

Insane amount of sweet potato left over and I used a little less than 1.5lbs. Ended up making 12 regular size muffin cups plus a large cast iron quiche. Had to pour on extra egg whites because the egg ratio was lacking 😅

Made this recipe but put it into a large 13 inch cast iron. Now that I have made this, I would adjust accordingly. I think there are two many sweet potatoes, so to fix that problem I added 6 additional eggs into the mixture to cover the spinach and sausage. When making the crust I actually broiled it towards the end to get it more crisp before adding the mixture. The next time, I will put some jalapeños in the sweet potato mixture to balance the sweet flavor and hopefully create a more savory flavor that compliments the sausage and spinach.

Beautiful and delicious! If you press the sweet potatoes firmly- there was just enough left for a small individual quiche AND they stay together. Silicone worked great!

Hey Kayla, great question! I have never made them with canned sweet potato, so I can’t say for sure what would happen. Because the recipe calls for uncooked sweet potatoes, I don’t know how cooked, canned sweet potatoes would hold up. What I would try instead of doing a crust with the canned sweet potatoes, is using them to make a crust on top, kind of like a shepherd’s pie. I would add the sausage and egg mixture to the muffin tins and cook. Then I would add a small layer of cooked sweet potato puree on top and cook until they were browned and like a crust. I can’t promise that would even work, but that seems like a better option to me than using the puree as the bottom of the quiche. Let me know if you try anything and how it works!

Hi Beth! These freeze great (just be sure to cool them completely before transferring them to a freezer-safe container), and can be frozen for up to a few months. They’re so good and handy you’ll eat them all way before then.

I’m planning to make these to take to a tailgate party (an early game.) Are they made in standard size muffin tins or the oversized tins? I have a 6 muffin tin, but it’s standard size. I plan to freeze, but how long would you microwave once thaw?

Sorry for the delay, Debbie! My 6-count muffin tin is larger than the wells in a 12-count tin. You can certainly make them in any size tin, but you may have extra ingredients that you’ll either need to use or waste. Maybe 3 of your 6-count tins would do the trick? Or you could fill up what you have and put the remaining ingredients in an 8×8 pan? Just some ideas! Also, Once I thaw them from frozen in the fridge overnight I just microwave them for 1-1.5 minutes, or until heated through. Hope that helps!

Thanks for the feedback! I love hearing when y’all make my recipes. My family will add "hot dip" on top of the quiche sometimes. It is basically homemade mayo with hot sauce (it might be on my website on the recipe with the hard boiled eggs), and it adds a nice touch.
